Recommended food pairings: Prosecco can start the night off or accompany a multitude of meals. It is especially complementary to sushi and sashimi dishes, in addition to charcuterie boards and marinated olives. It can also be enjoyed with a light brie cheese. Growing Conditions: Grapes used to create this beverage were cultivated throughout Victoria, particularly in the cool climate of King Valley. The fruit was harvested later, at slightly higher baumé than vintage-style Prosecco, to yield a soft, round and approachable flavor. Winemaker: Geoff Alexander Winemaking notes: The fermentation process concluded with a secondary stage in a pressurized tank, with a pressure of 5 atmospheres. The wine was then bottled to lock in the bubbles.
