Felipe Camarena's Destilería El Pandillo is renowned for its cutting-edge and eco-friendly practices. Found in the mountain town of Jesús María, 6,788 feet above sea level, he creates his top-quality Blanco Clásico tequila from hillside agave grown in one of Mexico's highest-altitude agave regions. The agave is carefully harvested and cooked in brick ovens before being mashed whole with its fibers for more nuanced flavor. It then ferments with rainwater and is distilled in small copper pot stills before filtering and bottling.
